Bistro Paulus is a new project of Michelin-starred chef Roman Paulus, who decided to build a novel concept of a modern bistro in the heart of Olomouc. It combines high-quality classic Czech cuisine with ideas he has picked up during his professional life around the world – from Austria, Italy, France, experience on ocean liners to South and East Asia.
