1 kg lean pork leg, 200 g of chicken liver, 80 g sliced onion , 80 g lard, butter or other fat, salt, flour, broth
Remove any membranes from the chicken liver and cut into strips. Fry in part of the butter with onion and salt afterwards. Slice the pork leg into 12 cuttings, tenderize it with a mallet, season with salt, top with liver, fold in half and secure with toothpicks. Flour the meat lightly, place in a pan with melted lard and simmer briefly in the oven. After a while, turn the steaks, add stock and simmer in the oven under a lid. At the end of cooking remove the lid and cook until they turn red and then add the remaining butter. Serve with boiled potatoes or fries and vegetable salad.
